1. Grease a 9×13 inch baking dish and arrange cubed bread evenly in the dish.
2. In a large bowl whisk together eggs and milk until smooth.
3. Add cooked sausage bell pepper onion cheese salt pepper and thyme to the egg mixture and stir to combine.
4. Pour the egg and sausage mixture over the bread cubes pressing down gently to soak.
5. Cover the dish with plastic wrap and refrigerate overnight.
6. Preheat oven to 350 degrees F and remove cover from the baking dish.
7. Bake the casserole for 45 minutes or until the eggs are set and the top is lightly golden.
8. Let the casserole rest for 5 minutes before slicing and serving warm.
