  • 2 cups sharp cheddar cheese, shredded
  • 0.5 cup Greek yogurt
  • 2 tbsp whole wheat flour
  • salt and pepper to taste

  • Instructions

    1. Heat olive oil or butter in a large pot over medium heat and cook the onion until translucent.

    2. Add minced garlic and cook until fragrant.

    3. Sprinkle in flour and whisk to form a roux, cooking for one minute.

    4. Gradually pour in broth while whisking to avoid lumps, then stir in milk and bring to a gentle simmer.

    5. Add broccoli florets and shredded carrots and simmer until vegetables are tender.
