  • 2 tablespoons olive oil or light butter
  • 1 small onion, finely chopped (about 1/2 cup)
  • 2 cloves garlic, minced
  • 4 cups fresh broccoli florets and stems, chopped
  • 3 cups low-sodium vegetable or chicken broth
  • 1 cup low-fat or 2% milk
  • 1/2 cup plain Greek yogurt
  • 1 and 1/2 cups sharp cheddar cheese, shredded
  • 2 tablespoons whole wheat or all-purpose flour
  • salt and pepper, to taste
  • optional garnish: extra shredded cheese, chopped chives, or crushed red pepper flakes

  • Instructions

    1. Sauté the aromatics: heat olive oil or butter in a large pot over medium heat, add onion and cook for 3 to 4 minutes until soft, stir in garlic and cook for 30 seconds.

    2. Add broccoli and broth, bring to a gentle boil, cover, reduce heat to simmer and cook for 10 minutes until broccoli is tender.

    3. Whisk milk and flour in a bowl until smooth, pour into the pot, stir constantly and simmer for 3 to 4 minutes until thickened.

    4. Blend the soup with an immersion blender until smooth or transfer in batches to a countertop blender and return to the pot.

    5. Stir in shredded cheddar cheese over low heat until melted, then whisk in Greek yogurt until creamy.

    6. Season with salt and pepper to taste and ladle into bowls, garnish if desired.
