  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 cups low-sodium vegetable broth
  • 1 cup low-fat cottage cheese
  • 1/4 cup fresh basil leaves
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • salt to taste
  • 1 small roasted red pepper, chopped (optional)
  • 1 medium potato, diced (optional)

  • Instructions

    1. Preheat oven to 400°F and toss tomatoes, onion, and garlic with olive oil, salt, and pepper then roast until caramelized.

    2. Transfer roasted vegetables to a pot and add broth, oregano, and optional red pepper then simmer for 10 minutes.

    3. Blend soup until smooth using an immersion blender or traditional blender then return to pot.

    4. Whisk in cottage cheese until fully incorporated and adjust seasoning to taste.

    5. Serve hot garnished with basil and a drizzle of olive oil
