1. Wash and chop tomatoes, onion, garlic, and potato if using.
2. Heat olive oil in a soup pot over medium heat.
3. Add onion and garlic and sauté for 3 to 4 minutes until fragrant.
4. Stir in tomatoes, basil, oregano, salt, and pepper and cook for 5 minutes.
5. Pour in broth, add potato, and simmer for 15 to 20 minutes.
6. Let cool slightly, then blend soup until smooth, adding cottage cheese while blending.
7. Return soup to pot, warm gently, and adjust seasoning and consistency.
8. Ladle into bowls and garnish with parsley before serving.
