1. In a mixing bowl whisk soy sauce, brown sugar, rice vinegar, garlic, and ginger.
2. Add chicken pieces to the bowl and toss to coat. Marinate in the refrigerator for at least 30 minutes.
3. Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
4. Lightly oil the air fryer basket and arrange the marinated chicken in a single layer.
5. Cook at 375°F for 10 minutes, shaking or flipping halfway through.
6. While chicken cooks, combine soy sauce, sugar, rice vinegar, garlic, and ginger in a small pot and simmer. Stir in cornstarch slurry and cook until thickened.
7. Brush cooked chicken with the teriyaki glaze and return to the air fryer at 400°F (200°C) for 2–3 minutes to caramelize.
8. Transfer chicken bites to a plate and garnish with green onions and sesame seeds.
9. Store cooled leftover chicken in airtight containers for up to 4 days or freeze for up to 2 months.
10. Reheat in the air fryer at 350°F (175°C) for 4–6 minutes to restore crispiness.
