2. add chicken and coat evenly then cover and refrigerate for at least 30 minutes
3. heat grill pan or outdoor grill to medium high
4. grill chicken 5 to 6 minutes per side until cooked through then let rest before slicing
5. divide cooked grains among four bowls
6. layer cucumber tomatoes red onion and olives over grains
7. slice chicken and arrange over vegetables
8. sprinkle feta and mint leaves on top
9. serve with lemon wedges
