Description

This low-carb cauliflower fried rice with turkey is a quick and flavorful weeknight meal that combines lean protein and vegetables in under 30 minutes. It’s perfect for meal prep or a family dinner.


Ingredients

  • 1 lb ground turkey
  • 3 cups riced cauliflower
  • 1 cup mixed vegetables (peas carrots corn)
  • 2 eggs, beaten
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp chopped green onions
  • salt and pepper to taste

Instructions

1. Heat sesame oil in a large skillet over medium heat and sauté garlic for 30 seconds.

2. Add ground turkey and cook until browned, about 6–7 minutes.

3. Stir in riced cauliflower and mixed vegetables, cooking 5–7 minutes until tender.

4. Push mixture to one side of the pan, pour in beaten eggs, scramble quickly, then combine with other ingredients.

5. Season with soy sauce, salt, and pepper, then top with green onions before serving.
