  • 2 scoops vanilla protein powder
  • 1 1/2 cups unsweetened almond milk
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • pinch of salt

    3. In another bowl whisk pumpkin puree, eggs, almond milk, maple syrup, and vanilla extract until smooth.

    4. Pour wet ingredients into dry and stir until combined, adding more almond milk if too thick.

    5. Fold in optional nuts or chocolate chips.

    6. Spread batter evenly in the prepared dish.

    7. Bake 30 to 35 minutes until center is set and edges are golden.

    8. Let cool slightly before slicing and serve warm.
