Ingredients
- 1 lb boneless skinless chicken breast
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1/2 cup greek yogurt
- 1 cup chopped spinach
- 1/4 cup low-fat mozzarella cheese
- 1/2 cup cherry tomatoes halved
- salt and pepper to taste
- 1/2 tsp italian seasoning
Instructions
1. preheat oven to 400 °f and lightly coat a baking dish with olive oil
2. in a bowl combine greek yogurt, garlic, spinach, mozzarella, italian seasoning, salt, and pepper
3. place chicken breasts in the dish and spread the yogurt mixture evenly over each piece
4. scatter halved cherry tomatoes around the chicken
5. bake for 20–25 minutes until chicken reaches an internal temperature of 165 °f
6. let rest for 5 minutes before serving
