Ingredients

  • 1 1/2 pounds boneless skinless chicken breast, cut into 1-inch pieces
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 small red onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and freshly cracked black pepper, to taste
  • 1/2 teaspoon dried thyme or rosemary
  • Juice of 1/2 lemon

  • Instructions

    1. Dice sweet potatoes and pat chicken dry.

    2. Toss chicken with oil, paprika, cumin, salt, and pepper.

    3. Heat skillet over medium-high and sear chicken until golden, about 4–6 minutes, then remove.

    4. Add sweet potatoes and onion to skillet, cook 10–12 minutes until lightly browned.

    5. Stir in bell pepper and garlic, then return chicken, add thyme and lemon juice, cook 5 more minutes.
