A simple, nourishing bowl of roasted sweet potatoes and seasoned chicken that’s gluten and dairy free. Perfect for meal prep, this high protein dish is both comforting and versatile.

1. Preheat oven to 400°F (200°C).
2. In a bowl mix half the olive oil garlic powder smoked paprika thyme salt and pepper then toss chicken to coat and let marinate 15 minutes.
3. On a sheet pan toss sweet potatoes with remaining olive oil salt and pepper and roast 25–30 minutes until caramelized flipping halfway.
4. Heat a skillet over medium-high heat and cook chicken 6–7 minutes per side until internal temperature reaches 165°F then slice or cube.
5. Divide chicken and sweet potatoes into bowls or containers then drizzle lemon juice and sprinkle herbs.
6. Add optional toppings as desired and serve or cool before storing in airtight containers.
