  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • pinch of salt
  • 1 cup pumpkin puree
  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons olive oil
  • 1/4 cup chopped nuts or dark chocolate chips (optional)

  • Instructions

    1. Preheat oven to 350°F and grease or line a 9×5-inch loaf pan.

    2. In a large bowl, whisk oat flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.

    3. In a blender or separate bowl, combine pumpkin puree, cottage cheese, eggs, maple syrup, vanilla extract, and olive oil; blend until smooth.

    4. Pour wet mixture into dry ingredients and fold until just combined.

    5. Stir in chopped nuts or chocolate chips if using.

    6. Pour batter into prepared pan and bake for 45–50 minutes until a toothpick comes out mostly clean.

    7. Cool in pan for 10 minutes, transfer to a rack, and slice once fully cooled.
