These ground turkey lettuce wraps are a light, high-protein dinner you can prepare in under 30 minutes. Crisp butter lettuce leaves cradle savory turkey filling for a flavorful, low-carb meal.

1. Wash and dry the lettuce leaves and refrigerate until assembly.
2. Heat olive oil in a large skillet over medium heat.
3. Add diced onion and bell pepper and sauté until softened, about 3 to 4 minutes.
4. Stir in minced garlic and grated ginger and cook for 30 seconds.
5. Add ground turkey and break it up with a spoon, cooking until browned and no longer pink, about 6 to 7 minutes.
6. Stir in soy sauce and hoisin or teriyaki sauce and simmer for 2 minutes, then season with salt and pepper to taste.
7. Remove skillet from heat and let the filling cool slightly.
8. Spoon the turkey mixture into each lettuce leaf and top with additional garnishes if desired.
9. Serve immediately or store components separately for meal prep.
