  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • salt and black pepper to taste
  • 1/4 cup chicken broth or water
  • juice of 1/2 lime
  • diced avocado (optional)
  • salsa (optional)
  • chopped cilantro (optional)
  • greek yogurt (optional)

  • Instructions

    1. preheat oven to 400°F (200°C)

    2. pierce each sweet potato several times with a fork and place on a baking sheet

    3. bake sweet potatoes for 40–50 minutes until tender and allow to cool slightly

    4. heat olive oil in a skillet over medium heat

    5. add diced onion and cook until translucent

    6. stir in garlic and red bell pepper and sauté until fragrant

    7. add ground turkey and break up with a spatula as it cooks

    8. season with chili powder cumin smoked paprika salt and pepper and pour in chicken broth or water

    9. simmer until turkey is cooked through and liquids evaporate

    10. finish turkey with a squeeze of lime juice

    11. slice open each sweet potato and fluff the flesh with a fork

    12. spoon turkey filling into each potato

    13. top with avocado salsa cilantro or greek yogurt as desired
