Ingredients

  • 3/4 cup lemon curd
  • 1 1/2 cups fresh blueberries
  • 1/2 cup granola or toasted oats
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon pure vanilla extract
  • lemon zest for garnish
  • fresh mint leaves (optional)

  • Instructions

    1. Mix Greek yogurt with honey and vanilla extract until smooth.

    2. Softly stir lemon curd to ensure an even consistency.

    3. Spoon 2 tablespoons of the yogurt mixture into the bottom of each glass.

    4. Add a layer of fresh blueberries, crushing a few for extra color if desired.
