  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 can 15 oz white beans drained and rinsed
  • 1 can 10 oz diced tomatoes with green chiles
  • 1 cup corn kernels
  • 1 cup low-sodium chicken broth
  • 1 packet taco seasoning
  • 1 tablespoon ranch seasoning mix
  • 2 tablespoons light cream cheese
  • 1 tablespoon olive oil
  • juice of 1 lime
  • salt and pepper to taste
  • optional toppings diced avocado pico de gallo chopped cilantro sliced jalapenos

  • Instructions

    1. Coat the crockpot with olive oil and add chicken breasts beans tomatoes corn taco seasoning ranch mix and chicken broth.

    2. Cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.

    3. Remove chicken and shred with forks, then return to the pot and stir in light cream cheese until creamy.

    4. If needed, adjust thickness by adding broth or cooking uncovered, and season to taste.

    5. Divide rice or cauliflower rice into containers and top with cheesy chicken chili and desired toppings.

    6. Reheat meals in the microwave for 1–2 minutes and finish with a squeeze of fresh lime juice.
