1. Preheat the oven to 425°F and line a large baking sheet with parchment paper or foil.
2. In a bowl, toss sweet potato cubes with half the olive oil, half the ranch seasoning, paprika, salt, and pepper, then spread on one side of the baking sheet.
3. Pat chicken breasts dry, toss with remaining olive oil and ranch seasoning, and arrange on the other side of the baking sheet.
4. Roast in the oven for 20–25 minutes, flipping chicken and stirring potatoes halfway through, until chicken reaches 165°F and potatoes are golden.
5. For extra crispness, broil for 2–3 minutes at the end of cooking.
6. Garnish with parsley or green onions and serve immediately with Greek yogurt dip if desired.
