1. Preheat the oven to 400°F (205°C) and line a rimmed sheet pan with parchment paper
2. Toss diced sweet potatoes with half of the olive oil and 1 teaspoon of ranch seasoning and spread them in a single layer on the sheet pan
3. Roast the sweet potatoes for 10 minutes
4. Meanwhile coat chicken breasts with remaining olive oil ranch seasoning salt and pepper
5. Remove the pan from the oven then arrange the chicken and vegetables beside the sweet potatoes
6. Return the pan to the oven and bake for 20 minutes or until chicken reaches an internal temperature of 165°F (74°C)
7. For extra color broil for 2–3 minutes before serving
8. Garnish with chopped parsley or a squeeze of lemon juice if desired
