  • Instructions

    1. Prepare the Lime Yogurt Base: In a medium-sized mixing bowl, combine the plain non-fat Greek yogurt, fresh lime juice, lime zest, powdered erythritol (or your chosen sweetener), and vanilla extract. Whisk these ingredients together until they are thoroughly combined and smooth. Taste and adjust the sweetness or lime tang to your preference.

    2. Drain the Cherries: Open your can of tart cherries and pour them into a fine-mesh colander. Allow them to drain completely for a few minutes to remove excess liquid. This prevents the parfait from becoming watery.

    3. Crush the Topping: Place your graham crackers or vanilla wafers into a zip-top bag and crush them using a rolling pin or the bottom of a sturdy glass until you have fine crumbs. Alternatively, pulse them briefly in a food processor.
