  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 cups cooked wild rice
  • 3 cups cooked leftover turkey, shredded
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups turkey or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • ½ cup half-and-half or coconut milk (optional)
  • Fresh parsley or cilantro for garnish

  • Instructions

    1. Heat olive oil in a large pot over medium heat.

    2. Add onion and bell pepper and sauté until softened, about 4–5 minutes.

    3. Stir in garlic, cumin, smoked paprika, and chili powder, and cook for 30 seconds.

    4. Add diced tomatoes, beans, wild rice, and broth, stirring to combine.

    5. Bring to a simmer and cook for 15–20 minutes, stirring occasionally.

    6. Add shredded turkey and continue to simmer for another 10 minutes.

    7. Stir in half-and-half or coconut milk if desired and season with salt and pepper.
