Description
These protein-packed egg muffins combine lean turkey sausage with colorful bell peppers and cheese for a filling grab-and-go breakfast. They bake in just over 20 minutes and store easily for meal prep.

1. Preheat oven to 375°F (190°C) and coat a 12-cup muffin tin with nonstick spray.
2. Heat olive oil in a skillet over medium heat then sauté onion and diced peppers for 3–4 minutes until soft.
3. Add ground turkey sausage, garlic powder, smoked paprika, salt, and pepper, and cook until browned.
4. In a bowl whisk eggs until combined then stir in the cooked sausage mixture and shredded cheese.
5. Divide mixture evenly among muffin cups, filling each about three-quarters full.
6. Bake for 20–22 minutes until centers are set and tops are lightly golden.
7. Cool for a few minutes before removing muffins from the tin.
