  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 14 ounces diced tomatoes, canned
  • 4 ounces green chiles, canned
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup chicken broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/4 cup Greek yogurt (optional for creamy finish)

  • Instructions

    1. Select Sauté on the Instant Pot and heat oil.

    2. Add diced onion and garlic and cook until fragrant, about 2 minutes.

    3. Add chicken chunks and brown lightly on all sides.

    4. Stir in chili powder, cumin, and smoked paprika until combined.

    5. Add diced tomatoes, green chiles, beans if using, and chicken broth.

    6. Secure the lid and set to high pressure for 10 minutes.

    7. Quick-release pressure, then open lid carefully.

    8. Shred chicken with two forks and stir to combine.

    9. If desired, select Sauté and simmer 2–3 minutes to thicken.

    10. Stir in Greek yogurt for a creamy finish and serve.
