This creamy, high-protein chicken chili comes together in under 30 minutes using an Instant Pot. It’s a versatile, low-carb meal perfect for busy weeknights and meal prep.

1. set instant pot to sauté and heat oil
2. add onion and garlic and cook until translucent
3. add bell peppers chili powder cumin smoked paprika cayenne salt and pepper and stir
4. place chicken on top of vegetables and pour in diced tomatoes and broth
5. close lid and set to high pressure for 12 minutes then allow 10 minute natural release
6. remove chicken and shred with forks then return to pot and stir
7. stir in cream cheese or heavy cream and shredded cheese on keep warm mode
8. serve in bowls and top with cilantro avocado and lime
