These cheesecake bars feature a buttery graham cracker crust with a creamy filling topped by a vibrant mix of elderberries and summer berries. They are an easy baked dessert perfect for spring brunches or summer picnics.

1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. Mix graham cracker crumbs butter and sugar until combined and press into pan then bake for 8-10 minutes and cool.
3. Beat cream cheese and sugar until smooth then add eggs one at a time mixing until just combined.
4. Stir in sour cream vanilla extract and lemon zest until silky smooth.
5. Pour filling over crust and tap pan to remove air bubbles then top with elderberries strawberries raspberries and blueberries.
6. Bake for 30-35 minutes until edges are set and center slightly jiggles then cool in oven with door ajar for 10 minutes.
7. Cool at room temperature for 1 hour then refrigerate for at least 3 hours or overnight.
8. Lift bars using parchment overhang and cut into squares wiping knife clean between slices for neat edges.
