2. In a large bowl whisk together flour, baking powder, baking soda, salt, and cinnamon.
3. In a separate bowl whisk eggs, sugar, ricotta, oil, vanilla extract, and yogurt until smooth.
4. Pour wet ingredients into dry ingredients, then fold gently until just combined and slightly lumpy.
5. Fold in diced apples until evenly distributed.
6. Divide batter among muffin cups, filling each three quarters full.
7. Bake for 20–25 minutes until tops are golden and a toothpick comes out clean.
8. Cool muffins in the tin for 5 minutes, then transfer to a rack to cool completely.
